Sparklers: Ham Sandwiches

We have a chest freezer. We put lots of things in the chest freezer. At one point, we put some homemade broth in the freezer, and it leaked before it froze. So now, we need to defrost the chest freezer and clean it out. This means that we’ve been working on eating out of the freezer for the last few weeks to get our stockpile of food down enough to fit only in the refrigerator freezer. We will be defrosting it this weekend.

This means that this last week we have been eating a lot of things that had been bought who knows when. One of those things was a ham. I love ham. We generally have ham around Thanksgiving, Christmas, New Years, Easter, and really, whenever CostCo has this particular ham out, we buy a couple, knowing we will eat it. 

Here’s the thing about ham. It is SUPER simple to make. Really, put it in a roasting pan and throw it in the oven at 350 for 10 minutes per pound. That’s it. You do not have to put pineapple rings on it or create some kind of glaze. You can just put it in the oven and wait for the timer to go off. And when it is done, you have a super yummy dinner. In our case, it was a “cheater” dinner. We made stovetop stuffing for C and instant mashed potatoes for me. 

It was a wonderful dinner. But the best thing about making ham? Leftovers. I LOVE ham sandwiches with real ham. Lunchmeat ham is okay, but if I am going lunchmeat, roast beef is better. However, when it comes to real ham, there is nothing better than a ham sandwich. It makes me happy just knowing that is what my lunch is going to be. Seriously, seriously happy.

In fact, C knows we only generally get two nights of dinner out of a ham because I want the rest for sandwiches. 

Sometimes, it is the simplest things that can bring us joy. One small thing that we do for ourselves can just make the whole day better. And so, I get ham sandwiches for lunch this week. And next week, when the chest freezer is back up and running, we will be buying another ham or two.
